From Bogota to Boston, With Love

We are excited to tell you about our Sous Chef, Alex Galvis – who revamped our Sólás menu and infused her Colombian heritage into some of the menu items. Stop into Sólás during your next trip to The Lenox Hotel to enjoy authentic Colombian cuisine in downtown Boston.

I recently sat down with Alex to talk about her culinary career and here’s what she had to say!

Blog_Bolton“My name is Alex, and I love to cook. It was about 6 years ago when I realized that it was what I’m meant to do. I started my culinary career in North Carolina after moving to the US from my native country, Colombia. I was blessed to work with some talented chefs that took me under their wing and taught me everything they knew. After 4 years in the countryside, I decided that it was time for me to expand my culinary world. I moved back to Boston, looking for my next challenge. I landed a job in Cambridge, and quickly learned what Boston was all about and wanted more. I started to explore the tastes of Boston and came across this great Irish Pub called Sólás. I found my next challenge. It is here where I truly heard my inner chef. It has been a fun roller-coaster of challenges, where I have grown not only as a person but also as a chef. I’m here for a while, and look forward to what’s next!”

Bailey’s Sauce

1/2 Cup Bailey’s or any Irish Cream
1/2 Cup Chicken Stock
1/2 lb Butter (1 stick)
1 oz Black Pepper
Pinch of Salt

In a sauce pan add Bailey’s and reduce. Add chicken stock and bring to a boil and reduce it a little. With low heat, slowly add butter and whisk it until sauce becomes creamy. Add pepper and bring back to boil constantly whisking the sauce. Add a pinch of salt.
